Chestnut & Fig Cookie


Unusually for me, I felt like baking this afternoon so I baked the American cookies that I learned the other day at a Zoom baking class.  I was going to bake them with lots of macadamia nuts but after I started preparing the ingredients I realised we didn’t have any.  So I baked the same ones as during the lesson, which uses chestnuts and dried figs (although I changed from white chocolate to milk chocolate).  I prepared double the quantity of the recipe, cut chestnuts and figs in larger chunks and made the cookies about one and a half times of the original recipe.  Today I baked just 4 of them and put the rest of the dough (in balls) in the freezer so I can bake them when we want.
