It was very nice and sunny today, which made me feel like going out for a walk, but it was actually quite chilly and I still have a cold so we stayed home. My cold seems slightly worse (it’s just sinus) but I’m still OK enough not to need to take any medicine other than using the nasal spray a couple of times a day.
It’s a Saturday today so my husband cooked the dinner. There were a few days this week when we didn’t cook dinner (like using what we had in the freezer or left-over) so we still had one of the meals from Hello Fresh so I told my husband he can cook that. Like often, he was saying by Thursday that he didn’t know what he was doing to cook on Saturday, so I very kindly suggested he could do this.
So, it was ” Spiced Chicken On Baked Thai Style Rice” from Hello Fresh. The chicken breast was cooked in the oven with Indonesian spice mix, the rice was cooked with Thai green style paste and Indonesian style spice mix. When the rice was cooked you add sugar snap peas, soy sauce, honey & butter (no butter for us), put the lid on and wait for a few minutes. Then you plate the rice, add sliced chicken breast, sweet chilli sauce and serve with a wedge of lime. It was similar to Thai Green Curry Rice but less spicy and less strong, it was very tasty. The only thing was that the sugar snap peas were almost raw and many pieces were not edible because of the strings. I would have cooked them very quickly in a boiling water before adding them. Also the recipe never tells you to do this but I always pull out the stringy bits from both sides of sugar snap peas. So I left most of the sugar snap peas but enjoyed the rest very much.
