Butternut Squash, Red Pepper & Sweet Potato Soup


A little while ago, our friend served us delicious soup and today we tried to make something similar.  We used butternut squash, red pepper, sweet pepper, onion, coconut milk, Thai red curry paste and vegetable stock.  I have a feeling our friend didn’t use butternut squash but this was also very good.  The only thing is that it had a little acidity as well, which I think is from red curry paste I used.  I tried a little of the red curry paste to see how spicy it was and it wasn’t very spicy, a little acidic and very gingery.  When I cook soup I usually leave some texture rather than making it very smooth but this time we did because the one our friend served was smooth and yummy.







As it was only soup and bread we had cheese afterwards – Brie de Meaux and Stilton we bought a few days ago.



We made quite a large batch, so there is enough for 4 more meals.  These will be useful for lunch as we are having lunch at home every day.
